Vivanta Bengaluru, Whitefield Presents “Himalayan Food Trails – Mitti Ki Khushboo, Pahadon Ka Swaad” at Terracotta
This July, embark on a memorable culinary journey through the breathtaking landscapes of the Central and Western Himalayas as Terracotta at Vivanta Bengaluru, Whitefield presents “Himalayan Food Trails – Mitti Ki Khushboo, Pahadon Ka Swaad”, from 20th to 30th July 2026.
Curated to celebrate the rich culinary heritage of Uttarakhand’s Garhwal and Kumaon regions, the festival also pays homage to neighbouring Himalayan cuisines from Himachal Pradesh, Ladakh and Nepal. Built around wholesome mountain ingredients such as millets, lentils, foraged greens, jakhiya seeds, hemp seeds, mustard oil and indigenous herbs, the menu showcases comforting, slow-cooked recipes passed down through generations.
Guests can begin their experience with soul-warming broths such as Kharode Ka Soup, a fragrant lamb trotter broth infused with mountain spices, or Pahadi Kaddu aur Pudina Ka Ark, a delicate pumpkin and mint consommé. Appetizers include the robust Jhakhiya Crusted Mutton Chops, Pahadi Murgh marinated in Himalayan herbs and cooked in the tandoor, Gahat Tikke crafted from protein-rich horse gram, and Jhakhiya Paneer Tikka, highlighting the distinctive nutty flavour of Himalayan wild mustard seeds.
The main course brings together iconic regional specialties including the hearty Kumaoni Mutton Curry, Chicken Kafuli inspired by Uttarakhand’s beloved spinach-based preparation, Himachali Sepu Wadi with lentil dumplings in spinach and yoghurt gravy, Bhang Paneer, Aalu Ke Gutke, and the aromatic Zafrani Guchchi Mutter Pulao prepared with prized morel mushrooms and saffron. These are complemented by rustic Maduwa Ki Roti, made from finger millet, and freshly baked Himalayan Sourdough Naan.
The meal concludes with traditional Himalayan desserts including the iconic Bal Mithai, a rich khoya fudge coated with sugar pearls, and Jhangora Kheer, a comforting millet pudding delicately flavoured with cardamom.
With its authentic flavours, indigenous ingredients and time-honoured recipes, Himalayan Food Trails promises to transport diners to the serene valleys and majestic peaks of the Himalayas, offering an immersive celebration of one of India’s most distinctive regional cuisines.
