Egg Dum Biriyani

For Rice
  • Basmati rice-4 cup
  • Ghee/Oil- 2tbsp
  • Cardamom-3
  • Clove-4
  • Cinnamon-1inch
  • Shahi jeera-1/4ts
  • Star anise-1
  • Lemon juice-1.5tbsp
  • Water-8cup
  • Salt-to taste
For Egg Masala
  • Boiled eggs-4
  • Ghee/Oil-3tbsp
  • Onion-3
  • Tomato-2
  • Green chilli-2 tbsp(crushed)
  • Garlic – 2tbsp(crushed)
  • Ginger-2 tbsp(crushed)
  • Red chilli powder-1tsp
  • Garam masala-1 tsp
  • Pepper powder-1 tsp
  • Biriyani masala- 2 tsp
  • Turmeric powder-1/2 tsp
  • Yogurt-3tbsp
For Garnishing
  • Onion-1
  • Cashew
  • Raisins
  • Mint leaves
  • Corriander leaves
1. Soak rice in water for 30minutes. Drain it.
2. Make some small cuts  in the eggs using a knife
1.Heat oil in a kadai, add sliced onion & saute untill translucent
2.add sliced tomato & saute till it gets mashy
3.Add ginger garlic and green chilli saute till raw smell goes
4.Add the powders and masala and saute well
5.Add yogurt and saute for 2 minutes
6.Add half cup water water to it
7.Add boiled eggs
8.add little corriander and mint leaves saute well  for 2 minutes and take off from flame.
1.Heat oil/ghee in  vessel  and add whole spices
2.Add drained rice to it saute for 2 minutes
3.Add the water and salt to it
4. After 2 minute add lemon juice and mix well
5.When the rice is 90% cooked, switch off stove.
1.saute onion in ghee until it turns golden brown
2.saute cashew and raisins
1.Take a vessel,spread some ghee and layer with half of the rice
2.Add the egg masala on top the rice and level it.Spread some fried onion nuts and leaves
3.Put rest of the rice on top and garnish with fried onion, nuts and leaves. Place the lid.
4. Heat a tawa on stove place the vessel.Cook for 5 minutes in low flame
5.Tasty egg biriyani is ready. Serve hot.
